Background

Established in 2011, V-Rev is one of Manchester city centres most popular speciality restaurants. It’s the city’s first and only 100% vegan eatery and since opening, they have won a string of awards including ‘Best Vegan Restaurant in the UK’.

After considerable success, V-Rev decided to expand into their new premises on Edge Street. Over four times larger than their original premises and with ambitious plans for design, V-Rev needed a trusted partner to deliver their vision. Acme were chosen to deliver the full restaurant fit out, from initial consultancy through to the restaurant build.

The Project

Dom Moss, owner of V-Rev, had high expectations for his new restaurant. Dom said, “As a 100% vegan restaurant, we’ve got distinctive values and a big message. We wanted to communicate that through our new premises by creating a unique, high-quality and well-designed space that really matched our personality.”

“We needed a partner with the experience, reputation and creativity to deliver our vision – a company that could turn the architect’s conceptual plans into a practical, ergonomic and visually striking restaurant. Acme brought an intricate understanding of restaurant design to the planning process along with the extra creative flair that we needed, and it was clear from the outset that they would go the extra mile for us.”

Darren Mason, Divisional Catering Manager at Acme said, “Every bit of V-Rev is Vegan, from the food they serve to the materials on their sofas. We were determined to source all the right materials for Dom and produce the visually unique restaurant he needed.”

The End Result

“V-Rev has grown into an incredibly popular diner. We knew from the traffic they had through their old site that, even with four times the floor space, they were still going to be very busy. They needed a layout that was operationally seamless, that allowed the smooth flow of staff, food and customers in a unique setting.”

Dom added, “The building we chose and layout we wanted posed a particular implementation challenge. The diner is underneath a newly built flat block with an abundance of structural pillars and beams to work around. We needed the kitchen to be located in the basement, which posed utility and ventilation challenges. Acme were fantastic at working with the builders to make sure all our needs had been considered – from disabled and dumb waiter lift shafts to basement kitchen ventilation. We were certainly glad of their expertise and input right from the start of the project”.

Tom Kennedy, lead designer on the V-Rev project said, “One particular design challenge was the basement kitchen ventilation system (HVAC). We designed a system that channelled fresh filtered air down to the basement kitchen all the way from the building’s roof, 6 floors above. You would think a busy kitchen located in a basement would get quite hot, stuffy and loud, but we’ve succeeded in making it one of the quietest and most comfortable kitchen’s we’ve ever created.”

Dom concluded with, “We’re delighted with our new restaurant. From the materials and workmanship of the front-of-house, through to the contemporary equipment and ergonomic layout in the back, the team at Acme have done a great job. We’ve been packed out from the day we’ve opened and the facilities are coping perfectly with the demand, just like Acme said they would.”
